Abundance

If your kitchen counter looks like mine you are enjoying an abundance of fresh veggies right now.  One of my favorite things about summer is fresh veggies.  There is nothing better than a vine ripened tomato. 
But there are times when I wonder how do we eat all this before it goes bad.  I do can salsa.  My boys will go through a jar of salsa in one sitting.  So this is a must and it takes care of the peppers and tomatoes.  I love pickles but the rest of my family are not fans so it hardly seems worth it.  And when I do make them I don't always finish all the jars before it's summer again and I have a bumper crop of cucumbers again.  You may ask why I plant them.  Well, while my family does not like pickles they do really like cucumbers.  So a lot just get eaten with salt or ranch.  But the counter was getting full so I went to Allrecipes.com.  Oh how I love this site.  You can type in the ingredients you have and it finds recipes for you.  Just look at this yummy salad I found for dinner last night.
Not only was it super yummy and healthy for our dinner.  It used up a lot of those delicious fresh veggies.

  1. Yum! My counter is filled with tomatoes and I don't want to see zucchini or cucumbers for the rest of the season. :o) I'll be making Nachos with those fresh tomatoes.

  3. What a nice harvest! I'm in the same boat with you in regards to the cucumbers. I don't even want to go and pick them anymore...just too many..lol

  7. Yum! My counter looks a lot like yours. Tomatoes, cucumbers, zucchinis and beans. I have so many tomatoes I don't know what to do with them. My daughter has taken a whole huge basket full home to make tomato sauce. I think I will try that recipe. It looks great!

  8. Your veggies look marvelous!! Our garden didn't fair too well this year...too hot early in the blooming stages so pollination was sporadic.

    If we were neighbors you could share with me!!!
